Recipes on Repeat | Transitioning from Late Summer to Early Fall

By no means do I consider myself an exceptional cook. One of my favorite ways to regularly prepare food is by choosing what is simple. However, this is a blog about discovering connection through mindfulness, and cooking is one of my favorite ways of doing that. Connecting to the process of cooking is one way I am able to be alone with myself and find a lot of peace through introspection. It makes me feel like I’m returning to the roots of what I am supposed to be doing as a human being!

All of these recipes/inspiration are examples of what I think is delicious, healthy, and an opportunity to find more joy in the mundane moments of life. I hope you enjoy!

Salmon Tacos

This recipe was inspired by @faithsfresh on instagram and turned out lovely with a squeeze of lime juice and a sprinkle of chili flakes.

Harvest Grain Bowls

I’m looking to find ways to bring more autumn flavors and foods back into my rotation so I started with these harvest grain bowls: chicken with paprika and other seasonings, quinoa, red onion roasted with sweet potato, and a sprinkle of pumpkin seeds. It was simple but warming and the perfect way to dive into fall flavors this season.

Mediterranean Bowls

I’ve been making iterations of these for a while, but they are the perfect late summer/early fall dinner with the combination of the warm flavors with the fresh tzatziki on top. Homemade tzatziki always tastes better, but usually I stick with the store bought one because it’s easy.

Many Variations of Taco Bowls

Usually I will bake sweet potato as a base for these (though today it was brown rice) and use whatever toppings or salsa or guac I have on hand. You can substitute the shrimp for whatever else your heart desires (I also use ground turkey a lot).

Salmon and Kimchi Bowls

By this point I think you get the point— bowls are the best. This one was made with salmon, kimchi, and brussel sprouts over a bed of jasmine rice and drizzled with spicy mayo.
