Hey and welcome to today’s blog post! I’m writing this the day it gets posted but I hope it’s still decent haha. The other night I had dinner at my grandma’s house and we made baked potatoes, salad, and edamame. I’ve been trying to be more plant-based recently and haven’t been eating as much meat unless you count fish. I have been looking for a lot of healthy veggie-based meals that don’t taste bad and this one was very simple and delicious. I drizzled some olive oil and added salt and pepper to my potato. We also made a salad with tomatoes, olives, and my favorite lemon dressing. We had edamame on the side and it was great.
