I have a love hate relationship with breakfast.

Sometimes it is hard for me to eat a lot for breakfast and if I eat the “wrong” breakfast I usually get a headache and feel terrible for the rest of the day.

That’s why I usually try to eat breakfasts that are light, healthy, and also dairy free. 

Not only are these breakfasts dairy free, but they are also vegan and are overall easy to make. 

Here are some of my favorite easy vegan breakfast ideas that I eat a lot. 

~acai bowl~

The perfect example of a food everybody has made before since it is easy, tasty, and very aesthetic. 

I’m a victim of this healthy treat too, so here’s how I make it. 

  1. In a blender, I add ½- 1 packet of frozen acai (1 if I’m more hungry), along with the fruit of your choosing (I like to use frozen mango, berries, peaches, and banana)
  2.  Optionally add some protein powder and/or spinach for some protein
  3.  Add your liquid (I like orange juice as well as coconut or almond milk) and blend
  4. Serve in a bowl and add any topping, such as coconut flakes, nuts, berries, banana, etc.

~avocado toast (with a twist)~

Avocado toast is a classic that many people know and love- including myself and I end up having this at least 3 times every week.

However, if you’re tired of having plain avocado toast then you should definitely try this version of it- It sounds weird, but I really like it.

  1. Toast some bread (I used sourdough but whole grain or rye bread would probably taste better with this recipe) and then mash or slice avocado on top- optionally you can add a squeeze of lemon juice
  2. Slice a few strawberries and place them on your avocado toast
  3. Drizzle a little bit of balsamic vinegar on top and serve

~vegan yogurt parfait topped with homemade granola~

This is such a great breakfast since you can make it the night or week before you want to have it and it’s really easy to throw together. 

Homemade granola is easy to make and tastes so good so here’s a recipe I really like. 

I usually omit the cashews and replace the raisins with dried cranberries.

For the yogurt, I’ll usually either have cashew or coconut milk yogurt, both which I think are great alternatives to regular yogurt. 

Ior this parfait, I layered rasberries, strawberry cashew yogurt, and the granola. 

Sometime’s ’ll even top the yogurt with some frozen berries, which I actually really like to have with yogurt.
